Now to the muffins!! Last week we got lots of yummy blueberries in our CSA box so I decided to make vegan blueberry muffins. So being the resourceful baker that I am, I immediately went to pinterest and found a vegan blueberry muffin recipe. I found a recipe on mydarlingvegan.com which looked really easy & modified it.
I changed the servings to 6 because if I made 12 muffins, Sean & I would eat them all & while we love muffins, we don’t need that many LOL. This reduced the amount of flour needed to 1 cup. I wanted to add the Nuzest Vanilla Protein Powder to the muffins so I decided to do 3/4c regular flour & then 1/4c Nuzest Vanilla Protein Powder.
I had no idea how the recipe was going to turn out, but as I started mixing the ingredients together I noticed that they seemed really thick so I added in more soy milk. I couldn’t give you a measurement, I just poured in some extra. I ended up with 9 delicious muffins.
They were soooo good! I ate 3 that morning & Sean took a bunch to work.
